Ok, so we have this meat market in the area who sells very good summer sausage. The way the guy who does the smoking is 4 hours of smoke,lets the fire go out, next day 4 hours again, and the third day 4 hours again. My question is how does he achieve an internal temp this way? I suppose the last day...
