Yesterday I was sketching a smokehouse plan and realized that I could build it to scale of about 2 inches to the foot and have it come out about right to allow me to use a squirrel as a substitute for a pig and sparrows for chickens and robins for turkeys. Nancy suggested that the squirrel hide...

I had in mind to cut hams, loins, and shoulders. Maybe spareribs and bacon. Figured to truss the birds and hang them neck down. I like the smoked minnows.

That's exactly what I have in mind Ross. We want to try some small recipes before diving into a large batch of unknowns! Also, we are on a pretty tight schedule-pick the meat up Tuesday (22nd) get it in the cooler same day and hang for 7 to 10 days then cut/pkg/freeze and the brother is heading for...

I use our coffee mill for a spice grinder and to clean it I put a tablespoon of dry rice in and run it to powder, dump that into a jar and run another and also save that. Tonight I used some of the milled rice powder to coat some chicken that I had seasoned for baking. It is different than flour...

Never thought about doing that!
I usually use the rice powder for thickening sauces and such, but will try this soon. I too have a good supply since I grind spices the same way with the same type of grinder....

After ten days of struggling to get my 87 year-old father-in-law to be able to use his new computer tower that was loaded with Windows 8 I gave up. I took the tower back to Best Buy and had them down-grade the operating system to Windows 7. Something about not being able to teach a old dog new...

I am very fond of good bourbon, good wines and brandies. I am also fond of homemade sausage and cured and smoked pork and fish. If I made and consumed as much meat as I would like and drank as much fine spirits as I could enjoy I would end up being a grossly obese drunk. Then I wouldn't be able to...

No need for me to rake leaves from the ornamental cherry trees in the front yard. Volunteers from the neighbourhood vaccuum them up several times a day and to boot, apply generous loads of fertilizer onto the lawn. Having this help allows me to spend more time making and eating sausage.

2 - mark your territory. Years ago my...
