Don't know if you heard of this over the pond but try deep fried turkey. It comes out moist and not at all grease.

Wal, read the cautionary tales about frying turkey. Many American houses have been set afire with spilled fat during the operation.

I've deep-fried over 100 turkeys, used to do a dozen every year for a company Xmas party, and then for my family Xmas dinner. Ross is right, be careful! On top of the danger factor there's also the added expense of the oil, where to dump the used oil, and a ton of clean-up to round-out the project. If you've got a smoker check out CW's Choke 'n Smoke Turkey recipe on this site. I'll be using that recipe for the turkey I'm planning to smoke this coming Monday, it's the best bird you'll ever tickle your taste buds with. I'd post where to find it but this stupid computer won't copy or paste, if I change from this page before posting I'll lose what I typed.

Thanks everyone for the great advice, don't possess a smoker just yet, and my deep fryer is only a small domestic one, so I think I will stick to roasting for now, just having my 1st attempt at brining some huge turkey thighs for roasting later today.
