Bacon as Ingredient

Should there be any bacon left over after family/friends/neighbours got theirs, this one dish dinner is one very tasty simple thing you can do with it. You will need;

Chicken thigh fillets
Your very own sliced bacon
Potatoes
One red onion
One green capsicum
Sour cream
Salt & pepper

Cook potatoes in their skins, allow to cool and peel. Butter/oil a roasting dish, sides as well. Slice and lay a first course of potatoes, and the dish sides as well.

Then, a layer of onion slices, followed by capsicum, and dabs of sour cream, salt & pepper.

Lay chicken on top of your bacon, salt & pepper, roll up

Last layer of potatoes, chicken on top

180 C Oven, if you have top and bottom elements, place dish directly on the base, roast until nicely browned

A bit of pickle or salad, and happy days...

You've done it again as usual Mate. That dish looks fantastic. The bacon looks great too. By the way, where did you buy it. At Adams???????

Yep Ross, one normal size will take two slices of bacon

I like the whole idea of that combination. I often prepare scalloped potatoes with onions and ham but this dish looks even better and really attractive. Is the capsicum sweet or hot? Or is it good to use both?

Looks delicious! :smile: It appears (from the Picture) that the Capsicum you used was of Sweet Bell Pepper type (This is based on the size I see in the Photo), am I correct or do you use something else or a combination of peppers in the dish :?:

Ross and JBK,

The capsicum is sweet, I have used the red once, also sweet, the green is a better taste. I don't think a hot pepper is good for this dish,
