(Grandpa's Orange Ranch Candy)
Six orange rinds
3-1/2 cups sugar
2 tblspns. corn syrup
2 tspns. ginger
1/4 tspn. salt
2 cups water
1 tspn. unflavored gelatin
1/2 cup water (for soaking gelatin)
granulated sugar
This is a terrific recipe for any grandpa to share with his grandchildren. While sitting around the campfire stretching the truth, use a razor-sharp pocketknife to cut the rinds from six oranges into 1/4" strips and remove the white membrane carefully. Boil the peelings 15 minutes then rinse them. Repeat the boiling, rinsing twice to remove the bitters.
Prepare a simmering mixture by mixing the sugar, corn syrup, ginger, and salt. Simmer the mixture and the orange strips slowly (40 minutes) over low heat, stirring it often. Add a teaspoon of unflavored gelatin that has been softened in 1/2 cup of water. Allow the strips to cool before rolling them in granulated sugar one at a time. Dry the strips on a cookie sheet several hours then store them inside a tightly sealed jar. Amazing, but true, the rind oil before boiling, is actually flammable. Squeeze the oil from an orange rind while holding a match below it and watch what happens.
