Been away for a bit due to massive computer problems, wife trying to finish up a large international deal before the unit collapses. A new dell laptop is in hand but must wait till the big deal is finalized to transfer all the data from the old to the new. Hope everyone had a great Thanks holiday! I ended up doing a small 12 pound bird on the Ronco after getting it all brined up for smoking, didn't like the weather forecast for outdoor smoking. Have a 21 lb turkey and a 6lb hunk of porkbutt defrosting in the fridge right now for a possible pineapple sausage assualt later in the week. Big storm moving in here and there will be no smoking done for at least the next four days. RAY

We just figured that you got lost in the stadium somewhere when the Giants won. Your wife was visiting relatives and you were... uh... you were.... uh... wolfing down sausage and lubricating your tonsils! We just thought you'd passed out in right-center field somewhere! :mrgreen:

Heck CW, this time of year I'm more apt to be passed out on the fifty yard line. Especially with all the glory we're finding with our new quarterback controversy here in northern California. Kapernick is the future and the future appears to be now. I just transferred a few sites over to my father-in-laws computer and am using that until Mrs G has completed her massive project. I picked up a turkey roaster off Craigslist for $20 and am looking forward to a pineapple sausage effort that incorporates the Norcal Kid method of a nice hot bath to bring things up to temp. I'm tossing around spice formulas and after the dehydrated pineapple and reducing some pineapple juice about the only thing I've settled on so far is allspice and some maple syrup. Whether a bonanza or bust I'll chronlcle the entire affair and report accordingly. It'll be a bit, my back has been acting up to the point where I just renewed my scrip for vicoden, so standing up in the kitchen for long periods is a ways off. There's always TV! RAY

Cloves seem to come up often in the few pineapple sausage recipes I've come across during my investigations, nutmeg also. I'm not a big fan of the flavor of cloves but I'm thinking a small dash would be OK as long as it wasn't overpowering, maybe a little nutmeg, and some white pepper too. I'm not seeing where cayanne is going to fit in on this batch, but ya never know. Looks like the weather might be condusive to sausage making / smoking this Monday and Tuesday. It's been pouring rain here the last couple of days and will for the next couple. All the fields in the area will flood and all the little critters that live in them will be looking for a dry place to move to, like my garage. The garage door is bolted shut until the weather clears, I don't want to have to put mouse traps all over my garage again. RAY
