Yes Wayne,
The sodium nitrite does something to the flesh you won't believe. It gives it a great "pink" color but it also changes the structure of the flesh. In pork, the change is to ham. In poultry, the change is into "Idunnowhat" - but it tastes marvelous - especially used with the soft drink Seven-Up (or Sprite). I can give you the scientific explanation but I don't know if its really important here. When you taste the final product, you'll marvel at the change sodium nitrite has made.
