Smoke house care

Hello everyone,
I am wanting some advice on how often should I clean my smoker? It can hold about 100#'s so it is fairly large. It is an old upright freezer. Any suggestions on cleaning products, would also be appreciated. :lol:

When I clean smoke stain from fireplace bricks I use "Top Job " brand cleaner but I suppose "Simple Green" would be a better choice for a food handling appliance it is approved for use in food processing facilities.
