That's a serving knife for the chef at the buffet table. And a very nice one.

I suppose it could be used for that but it has a more specific purpose and is written on the knife somewhere, any more guesses

Sabatier is a well known french knife maker. So the quality should be 100%
I say "should be" as the handle and the blade fitting seem to suggest otherwise.
It should last for years. It's a nice gift,

unfortunately Sabattier has probably allowed other countrys to manufacture there knives. Here is a cheese knife from their outlet store.

The molded handle looks to be of the same quality as that of a ginzu knife my daughter-in-law gave me.

Ross,
Whatever goods you puchase nowadays seem to be made overseas, just look at some of the packing it arrives in.
Mind you, the quality and finish has dropped significantly but not the price.

Keymaster, looking at your Blog, I came to the conclusion that all of your family must be 50 stone in weight.
The amount of wonderful food I saw, can feed all the homeless in the States.

I have purchased some very fine knives in yard sales. The knives that I use for boning meat are Farberware from the grocery store. They take and hold an edge very well and the knife that finds the most use is a wooden handle, carbon steel Case brand knife that I bought fifty years ago.
