Favorite stay at home weekend brunches

Every now and then someone invites us out to brunch usually after church services. We realize that it is a social thing but we are both put off by the quantity of mediocre food. Most of the time we prefer to stay home and do our own cooking.
Like:
thick sliced home cured and smoked bacon or home ground and seasoned breakfast sausage.
Poached eggs on toasted home made bread.
Thickly sliced sauted mushrooms and freshly cut and hulled grapefruit.
Finished with good coffee and toast and home made jelly

Hi Ross,
Poached eggs on toast are always good!
Your breakfast sounds fantastic. I no longer buy bacon and rather fry up the Kassler I smoke.
Curing and smoking bacon is next on my list to-do.
I should also find a egg poacher so I can make them again, have not had them for a long time.

Poaching an egg is the easiest thing in the world. Add a splash of vinegar to a pan of boiling water, three inches deep is about right. Stir the water into a swirl and break one or more eggs into in and start the toaster as your timer. When the toast is done so are the eggs. A slotted spoon and you have the job done. If you like asparagus with your eggs then when the eggs come out the asparagus goes into the same pan . It only needs two minutes.

If you need to prep several poached eggs just store them in a ice water bath then rewarm at service time.
