Homemade Sausage Making

Today is supposed to be the day my new LEM 5# stuffer gets here. Just placed an order for casings and other misc. stuff last night on butcher packer. I have a pork loin and a small piece of ham brining right now, ready for the smoker over the weekend, and I'll be making a large batch of various kinds of sausage this weekend!

I'm going to be trying my hand at cured and smoked sausages for the first time this weekend, as well as some of the fresh sausages I've made before. I'm also going to try and make some venison snack stix as well which I've never attempted before. Getting things ready for our ice fishing trip up to Northern Wisconsin the following weekend! Busy weekend- and I'm supposed to get some painting done (not excited for that )

Please get your priorities right, painting, home maintenance and other boring chores must be put on the back burner.
Sausagemaking, curing, smoking, fishing and hunting are THE most important jobs on the MEN's calender.

Sounds like a whole lot of fun Tooth, I may do some stuffing and Jerky this weekend myself.

Haha I'll let you guys explain that one to the wife! Painting and the other crap I occasionally do so when I go fishing hunting and make large batches of sausage there's no complaining! I'd call it a decent trade off.

Everybody knows you're right. I was just talkin' like a big shot. Truth is, I have more "honeydew" projects than you can imagine. The thing that really bothers me is that they increase in number as my old bones get older! Good luck with your paintin'!
