Fixing a screw-up

Yesterday I was measuring salt,cure#1 , cracked black pepper and sugar for annointing a pork picnic shoulder that I had cut into inch thick slices. It is 4 kilograms so the calculations were easy, 15 grams of salt for each kilo and a half teaspoon of cure and a tablespoon of sugar. The salt weighs 12 grams per tablespoon so I shoveled in five spoons of salt and two teaspoons of cure#1. Then mindlessly picking up the salt instead of the sugar I shoveled in five more spoons of salt. I realized my error and added two more teaspoons of cure#1 then mixed everything carefully and divided the result into two portions and saved the one. Then I added the sugar to the mix and stirred in a tablespoon of molassas diluted with two ounces of water. and proceeded from there.

Okay Ross, go stand in the corner for twenty minutes then write on the chalkboard 100 times, "I will not shovel salt into sausage"! :shock:
