Here`s the recipe for home made catsup (ketchup).

Home Made Catsup

6 pounds tomatoes, peeled, seeded, and chopped
2 stalks celery, chopped
1 large onion, chopped
4 jalapeño or serrano chiles,
(stems and seeds removed, chopped)
1 red bell pepper, stem and seeds removed, chopped
1 cup brown sugar
11/2 cups cider vinegar
2 teaspoons dry mustard
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/4 teaspoon ground allspice
1 to 2 teaspoons salt

* Cook the tomatoes for 15 minutes, then drain off the juice. Add the celery, onion, chiles, and bell pepper and simmer for 1 hour. Add the sugar, vinegar, and spices and simmer for an additional hour. Remove from the heat and puree until smooth. Pour into sterilized jars and process in a hot water bath or freeze the mixture for use later.

If word gets out in Heinz country (PA) that someone there is using their own recipe for ketchup, things could get ugly. As they say a little bit farther down the road (West Virginia), "You's in a heap-a-trubble, Boy."

...but seein' as how you're using jalapeños or serranos, you can take refuge out here with us. (Bring an extra bottle. ...looks good.)

According to my sources, Mr. Heinz never used catsup, preferring to stick to the more generic (and sticky) term, ketchup. This most beloved of sauces was originated in the mid-1800's by my relative, Mssr. Canard, in cooperation with a close relative, Herr Ente, for use in staunching wounds incurred while flying the Mississippi Flyway.

Unfortunately, because both feathered gentleman were recently naturalized citizens who had not yet formed a venture capital partnership and siphoned the funds off to the Cayman Islands, their company became a casualty of the American Civil War. It was not until a young upstart cousin sold out the remaining resources and the new owners abandoned the primary use of the time, stage gore, that its potential as a food source became widely recognized.

Sales soured, no, soared, during the Reagan Administration, which successfully re-designated ketchup a vegetable. This devastated the only remaining holdings of the Duck family, which had been based on the fact that the tomato is actually a fruit by virtue of having seeds. The descendants of the once-powerful family now exist on scavenged grain crops along several major flyways in North America. Their plaintive cries are best heard while on the wing, near sunrise and sunset as their flocks gather to try to take back their heritage. [insert duck calling joke here.] [Oh, never mind.]
