Tonight i fixed a smoked salmon quiche. Super simple and outstanding. saute three tablespoons of onion and celery. Layer that in a pastry shell with sliced smoked salmon and two eggs beaten with ½ cup of milk.Top with slices of salmon and colby-jack cheese bake at 400°F until the custard test done. This is for a five inch pie pan.

I eat quiche, but not in public. Since our household is a gluten-free zone, how do you think this recipe will work work sans croûte? I have a freezer full of smoked oncorhynchus, and always looking for different ways in preparing it.

Ever since Nancy had mouth cancer I have made baked custards for her. I have no doubt that they can be made savory as successfully as being made sweet. The egg/milk ratio remains the same just the seasonings change. pumpkin pie works the same way.
