Roast chicken and the things you can do with one.

On Thursday evening I roasted a fresh chicken for supper, last night I mashed some for a spread for crackers. Today Nancy and a friend were working at the church for a big yard sale next week and I offered to take them lunch. I cut about half a pound of the meat into neat fork sized pieces and then added onions, diced carrots , green pepper, celery, grape tomatoes and chopped boiled eggs. seasoned it to my taste and took it to them with some fresh bread. Sandy looked at it and siad , "You really made a salad out of it." I said of course otherwise it is just cut up chicken..
