S&H Differences

I was all set to order some hog casings, pre-mixed sausage seasoning, and speed powder from PS Seasonings, total $134.68. When I went to checkout they stated it was going to cost a added $52.50 for shipping and handling. That order got scrapped in a hurry!
I clicked over to The Sausage Maker and worked up a order of hog casings, Instacure#1, powdered dextrose, and some SPC, total $103. When I went to checkout I found the S&H were free.
PS Seasonings is located in Wisconsin, The Sausage Maker in New York, I live in California. I'm pretty sure it's time to go back to the alchemy of forming my own spices for seasoning sausage. I love "free"! RAY

Ray you have the means of weighing everything and you certainly can figure increasing from ounces to pounds. If you season a couple of pounds of sausage with a Marianski splice blend and taste it, you can start adjusting the blend and keeping notes. many of these spice blends include the salt and you can buy salt for fifty cents a pound at the corner store.

I never buy ready made sausage seasonings anymore for a long time. Most of it is salt and other artificial crap anyway.
It's not difficult to mix your own for even better results. Just make sure you write everything down as Ross mentioned.
When you make the Project B2 Csabai, I can assure you that you will make plenty of it in the future. You can increase the stewed garlic, sweet paprika and other spices to your own liking.
All the spices can be bought in Supermarkets as well.

Hi Ray - you might try buying spices on-line. I have used myspicesage.com a number of times. You'll get a 1/4 lb for the same price you pay for a tiny bottle in the supermarket. Shipping is free for orders over $10. There are probably better deals on the internet, but this is what I have used. I mix up large batches of blends that I use often - for example, cajun spice rub.

Regarding the PS Seasonings shipping charges, I copied your post to the Customer Service lady whom I had contacted, and that got their attention! I got this in reply:
Hello Russ,
Thank you for bringing this to our attention. We did look into this and are offering a $5.00 max shipping cost for all orders of $50.00 or more.

I e-mailed PS Seasoning just as you did and when I checked my e-mail this morning I had the exact same reply. I ordered sausage supplies in the past from PS Seasonings, The Sausage Maker, and Cabelas, never got a bum deal.
For quite a few years I used to measure my own spices for Italian sausage, and still do for all other sausages I make besides Italian. The PS Seasoning blend is something I have not been able to duplicate and ever since I started using that blend most folks respond to me by saying it's the best sausage they ever tasted. I remember the first time I made Italian sausage using the recipe in Rytec book and the spices were seriously lacking, tasted more like breakfast sausage to me than Italian. I've got a big bag of spices in the pantry and can always get more in five minutes. I haven't ordered anything from anyone yet, tho I've only one bag of casing left. I'll be heading to Reno in a week for my belated birthday outing so a stop at the Cabelas there might be in order. I use a Cabelas Visa card for just about everything, gets me about $500 in free Cabelas shopping every year. I love free! RAY
