Almost at IT. Hit em with some smoke. The string is for me to tell how much shrinkage is going on.

It looks like you are using the Rytek Kudus method on these Dry cured pepperoni's. I think I'm going to do landjaegars next in my dry cure cabinet. Looking good Nepas and cant wait to see some of that on a Pizza :razz:

Yup it is. I added a couple other spices that they left out for good pepp.

Here is my cure fridge.

Digital temp/fridge control. The fridge piggy backs off the control plug. Temp shows 46, thats cuz i had the door open. The controller is holding 40* when i dont open the door so much....YIKES

Hi Nepas,
In your curing display fridge, the photo shows a fan, do you still use it to blow cool air in the cabinet or is it disconnected?
I have been looking for a drinks display fridge to build something very similar to what you have.
You also mentioned that you are looking for a smaller capacity humidifier, is there a specific reason for that?
We live in the sub-tropics with fairly high humidity so obviously a smaller humidifier would probably do.

The fan inside is counter clockwise and blows up over the condensation coils. If Keymaster wants to chime in here, he is very good at this type of fridge operation.

Jan,
I think Nepas has the fan set to only come on when the refrigerent compressor is called to come on. The fan pulls the warm air in the cabinet and blows it on the condensate coil which absorbs the heat from the cabinet and transfers that heat through the refrigerent out to the evapoator coil which then cools the refrigerant and the process starts all over again.
I have heard a lot of people say that when their compressor kicks on there is a lot of humidity lost along with the heat. Their is really no way around this in warmer climates. When I did my salami it was so cold in the garage I had no need to plug the refrigeration portion in . I like the Ultra sonic humidifier I purchased as it produces a cold fog of moisture and not just blows over a container of water like some humidifers.

I certainly will contact you again when I am ready to roll. One thing I miss here is that I can't make salami the oldfashioned way. Too hot and humid here but there is light at the end of the tunnel. My wife likes to shift to Tasmania with colder temperatures.
