Does anyone know whether,if you use soy protein isolate instead of concentrate is the amount used interchangeable?
Would this produce a more juicy sausage? Any disadvantage to using this one instead?

Hi Angela,
There is a difference. The Soy Protein Concentrate in Australia is mostly 70%. Soy Isolate is around 90% and holds a lot more water, so it is not interchangeable.
I am experimenting with the Isolate in frankfurts but I will also try the Concentrate.
The 70% Concentrate is available from Master Butchers Co-op in Adelaide.
I can't source the 70% in Brisbane at all.
I will keep you informed, hopefully some other members with much more knowledge and experience than me will no doubt give some better advise.

That is a terrific answer. Well done. Someone will no doubt refer Ursula to the use of phosphates for its moisture-holding ability and many sausage makers use it. I don't, but it's just my opinion. Jan, the reason I was leaning towards using the isolate is that I have sourced it t Bulk Nutrients for only $19 a kilo, while the 70% seems harder to locate. (I will try Master Butchers if necessary)
Thank you for the link Chuckwagon. You are an amazing resource. Are there any disadvantages to using the isolate? It seems to be the most affordable form I can acquire here.

Soy Isolate for $ 19.00 a kilo!!!!!!!!!!!!!!!!!. Wow, they saw you coming for miles!!!!!!!!!!!!!!!!!!!!!
I just bought the same from Denco Trading, virtually next door to me for $ 8.00 for 1 kg container.
Have a look at their website, Good people, I also met the owner. They don't sell 70% concentrate.
Master Butchers in Adelaide have Soy Protein Concentrate 70% for $ 26.85 for 5 kg.
Matter of fact, I am going to order it next week, at least then I have both.
