Talk to me about those stockinettes your using in the photo. It looks like a different size for the ham and another for the picnics. I'm interested in getting some for small hams, picnics, and some 10# chubs of headcheese for support. I've been searching the net and there is a lot of stuff out there in different sizes, 22,24,26.etc. Haven't found a good explanation on what the sizes are and what they'll hold. I even seen some in 50 yd. rolls. Thanks

Which Stockinettes To Use
You are right Rick those cheesecloth bags are a lot smaller than those normally sold for hams and whole picnics. And I am of little help as to the dimensions, etc. I had these with my wine making supplies, for straining fruit, but they are essentially a mini version of the larger ones for ham. Hi Rick, hope this helps a bit. The size I used on these pork loins was a "#20" and it was a perfect fit. They are about 3&12" - 4" flat and stretch to maybe 7"wide at most. I used them for chickens once and it was a very tight fit, tough on the hands.

The second time I did chickens I used these 36" stockinettes that stretch enough to accomodate a fair-sized turkey.
