Seeing that your smoking problems are solved, there is the time to join Project B. CW would be pleased to add you to the list of participants, nothing to lose, everything to gain with virtually daily updates and advise.

Goodness Girl, we've missed you. Sounds like you've got all your smoke house problems solved though. Which woods did you decide to use? Is your Dad doing well? Will you please give him our best? I'll just bet he goes crazy over the Mettwurst sausage we've got coming up soon. Hope to see you posting a few photos of Project B sausage. Are you going to try the Italian or the Polish sausage for the cooked/cured type? Oh, and yes... you've got to let us know what you think of the breakfast sausage recipe. I really like the stuff. Hope you will too. Good to hear from you kid! :wink:

I'd dearly love to join the group, but am not organised yet. I have yet to source and purchase ingredients, and don't have all the equipment yet. So this time I'll have to stand on the sidelines, and learn what I can from seeing how the rest of you go. Have fun! It sounds like a wonderful project, and so generous of Chuckwagon to give so much of his time to help you all.

Hi Chuckwagon,
Thank you for your lovely wishes. My dad is well, except for a bad case of sciatica. We just celebrated mum's 80th birthday, so have been pretty tied up with that. He is loving the smoked meat, and is really looking forward to me making some traditional sausages. His particular favourite is Leberkaese, which is a bit complicated.
As I said in my previous post, I'd have loved to join you in your group, but haven't got the setup, equipment and ingredients yet. Am enjoying following the project though. So kind of you to organise it. I hope to learn plenty as a voyeur!
