Pork Skin

Post by Rick » Sat Dec 14, 2013 14:14

Just looking for a clarification, as I'm heading to my local slaughter house to get some sausage cuts.

I notice that some recipes call for pork skin, is this actually the rind off the belly or some other area of the pig?

I'll assume then, that when I get my skin that I'll have to scald and scrape it in order to remove the hair? Can I use a propane torch and just singe the hair off?

Many thanks for the help!

The hair is removed during the scald when a pig is slaughtered so you shouldn't have any hairs on it or very few anyway.
