Just plain roast pork--sorta.

We are having friends over for supper tonight and I have a pork butt that I rolled for the occasion. I sliced the slab from the skin side quite thinly and wrapped it around a lean core of muscle.Image I seasoned the core with Italian seasoning.

Image and I will roast it in a slow oven until it is falling apart tender.

It is only about three pounds so there won't be much in the leftovers department.

It turned out pretty good.
