Homemade Sausage Making

I've been using mini-USB fans in my drying box but they haven't lasted very long. S I got a couple better fans and also a timer.

My question is, how long to run them and how often?

I'm currently in a batch of Soppressata and Saucisson.

That's s a tough question as every chamber is different. I don't run an internal circulation fan unless the humidifier is running. I do have an air exchange that runs several times a day.

Do a search for air+ exchange, and then fine tune to your set-up
