Homemade Sausage Making

My 5th day in in my chamber I notice fruit flies or gnats. Everyone I open for fresh air they swarm in considering my apartment smells like a sour meat plant. I`ve seen the apple cider and soda method in a cup but could I put that in the chamber ? I have just now put 4 cups around the area and kitchen. I can`t see home they could get in the chamber since I have no holes and the side of the door has a rubber seal with only 3 cords coming out into the outlet and the controls. Any suggestions ?

I stress over this too. I dread to think what would happen if flies laid eggs in the sausages...

I have a bigger chamber - a whole room - and I use an electronic insect zapper device in there. You don't see many insects in the room but the device does collect some dead ones occasionally.

Has anyone ever had maggot infested dry cured sausage? Or maybe the environment doesn't allow them to survive?
