The Practical Guide to Making Salami

Post by jens49 » Fri Aug 30, 2024 07:23

Just discovered that the Marianskis have produced a new book. I have many of their books and most of them are quite good.
Anyone purchased and read the new book? "The Practical Guide to Making Salami".
Does it bring much new knowledge?
Being in Europe the price is a lot higher for books from US. :(
TIA

My go to book on the tech side of making salami has been Gerhard Feiner's Salami: Practical Science and Processing Technology which has helped me considerably. I also read articles on the subject in Science Direct. I will be buying the Marianski book to add to my library as well.

I just received my copy. I've read only the first twenty pages or so, but it looks very comprehensive. Certainly, the table of contents looks like it's a very complete treatise.

Hi Jens, Did you get the book? Supposed to be an update to "The Art of Making Fermented Sausage". If you got it, what do you think?

I read everything I can get my hands on for new knowledge. The day the book arrived I read for maybe 20 minutes and might have leafed through some pages twice since. That's it.
I highly recommend some of their other books.

I already have and have used a lot their books "The Art of Making Fermented Sausage", "Home Production of Quality Meats and Sausages", and "Polish Sausages, Authentic Recipes And Instructions" along with one of their greatest recipes books. So, maybe this new book is redundant.

Yes. My apologies for not following up sooner, I totally forgot.

The book is brilliant, I'm very impressed. Almost encyclopaedic in its depth and detail. You really get to learn about every aspect of salami production, including a whole lot of background on how different cultures work, the effect of temperature and humidity, and so on. It really is worth reading, and the language is such that you don't need a science degree to follow.

The recipes are a nice bonus, although they are available elsewhere.

I highly recommend the book!

Cheers,

Michi.
