marivac food tumbler

Anyone here ever used one of these to marinade meat? Sounds interesting !

Yes i have one. Been using it for years. However if you find one, treat it right because Eastman Outdoors who made them have stopped making them.

My understand is that tumbling definitely has its place for processing meats but marinating is not one of them. Marinating is the process of adding flavor and tenderizers to swell the proteins in meat. Tumbling is not necessary for that. That can be accomplish in short time in a vacuum, e.g. something like a FoodSaver, or soak for about 1-hr per inch of meat.

That I got from reading 'Home Production of Quality Meats and Sausages' by Stanly Marianski and Adam Marianski. It's a great book! :grin:

The Reveo is a vacuum tumbler. It draws the air from the canister which opens the meat fiber thus makes for marinade penetration. I can vac tumble in 20 mins what normally can take from 2 -12 hours or more.

Meat snack processors use vacuum tumblers to quickly marinade meats.

Another home tumbler is the F-8 Flavor Maker Vacuum Tumbler

I was lucky to find one early this year. I use it quite a bit. The biggest eye opener for me was when I did a steak in it for twenty minutes. It was the best darn steak I BBQ. :wink:

I toss steaks or chicken into a baking dish, add marinade, slide the whole thing into a FoodSaver vacuum bag. Excellent results, no tumbling.
