Duck Sausage Recipe Needed

I've got a old hunting buddy who would like for me to make a big batch of duck sausage from a bunch of frozen deboned duck meat he has on hand, I keep 50% of the finished product. I'm not finding any duck sausage recipes in the members index, and my stupid new computer won't let me open up the three duck sausage recipes I've found on the Len Poli site. I had a recipe saved on my old computer which is now dead that I remember called to be cut with porkbutt. Anybody got a duck sausage recipe to share? RAY

Scrap this post please. The more I think about having to finger every little piece of meat before it goes into the grinder I'm thinking of skipping the entire project. I've already got two crowns from lead shot fowl in the past, I'll bet steel shot isn't softer. I did stumble on this recipe which looks OK, but I don't feel like chancing my grinder or molars now. RAY
3 pounds duck meat or goose meat
1 pound pork fat
1/2 cup red wine, chilled
1 teaspoon Chinese five spice powder
2 tablespoons chopped fresh sage
2 teaspoons ground juniper berries
2 teaspoons caraway seed
1 tablespoon ground black pepper
34 grams, or 2 level tablespoons, kosher salt
hog casings
Looks like a lot of salt to me.

Don't give up yet Ray! You can apply most game meat recipes to the duck breasts, just maybe use a bit more spice. I made some pepperoni sticks with the goose breasts and they taste not too bad. Hank Shaw has some duck formulations here that might work for you. But his Polish Duck Sausage is a real stretch. It's as Polish as Barack Obama.

I gave up duck hunting about five years back due to my hips hurting from getting stuck in the mud. I've already cracked two molars over the years and have had crowns installed due to chomping down on buckshot. When I read your post about having to finger every little bit of meat before grinding it really hit home. I love my grinder, and my teeth!
