Smoked Coho Salmon

Hello everyone
I did two coho salmon in the smoker last night they turned out great used a basic salt brine no sugar dont like sweet tasting fish we caught one of the fish on Saturday and one on Sunday great weekend oh I smoked them using hickory thats all I had at the house

They look beautiful. Around here all that great fish wouldn't last beyond the 7th inning stretch at tonight's game. What kind of smoker are you using Huey? Your racks look "perty sturdy"

that batch was a small one so I did it in my Gosm gas smoker they are nice heavy duty racks really like the smoker I have 4 smokers total another gas smoker that is made by the same company it needs some TLC in a bad way I also have a UDS i Built and I have a electric smoker I built it is a big boy it is 7 ft tall by 2 ft deep and 3 ft wide I have at least one of them going every weekend

Wow. That's pretty cool salmonclubber. How about posting a few more photos of your smokers? I'm sure other folks would especially like to see the one you built yourself. What else do you smoke besides salmon?

I do a lot of sausages and some hot smoking in the UDS and gasser the sausages are all done in the electric
here is a pic of my gas smoker
here is my electric smoker before I did any modifications to it
and my UDS
