Welcome aboard ssyeo in Singapore - the "Garden City" of the Equator. Wow, talk about relative humidity... a constant 80%. Making fermented sausage in Singapore should be a snap. Ssyeo, are you near the Jahor Strait or the Singapore Strait? If you ever get tired of all that warmth, bring a snow shovel and come and visit me. Nice to have you here ssyeo!

Wow, we have all sorts of wranglers riding into camp tonight! Just look at all the dust they are a`kickin` up. Slow down around the chuckwagon boys... you don`t want trail dust in yer` Dutch oven biscuits! Hang yer` hurricane decks in the tac-shed and kick the hooks off a yer` boots. Man at the pot, pour the brown gargle and welcome these fellas to our campfire!
First up is nepas in beautiful Savannah, Georgia. What a history that town has! Next is Blair in green Pennsylvania. This is the place they make "scrapple" folks. And here`s Ninkasi from the gorgeous Pacific Northwest... wow, how I`d like to be abandoned there, say for the next 99 years! Then from Cincinnati, Ohio is a fellar name bbathe. Shucks pards, we have drag riders who take one of "them-there" baths EV`RY Saturday night, whether they need it or not! And Dutch is bringin` up the rest of the herd. He says he`s my neighbor, just east of the oquirrhs. Welcome aboard cowboys! It`s nice to have you with us on WD, the best forum on the net! Make yourselves at home boys!

New here to this site but been all over the place. Mod on the Bradley forum and in the SMF. Been smoking and curing for 32 years so i gots some experience .

Welcome again Nepas, Nepas is a friend of mine for about two years, He has tutored me a lot in smoked sausage making. He has always been there for me in Pm's and Phone calls if needed. nepas has a lot of experience in the art of charcuterie and is always more than happy to help anyone that ask for help. Welcome aboard Nepas. I met Keymaster & Nepas through the Bradely forum and they have helped me plenty in my quest to make sausage. If Nepas opens his recipe vault you can count on it being a good recipe.

Hi Chuck,
Thanks for the warm welcome. Yup the humidity is a constant 80% but so too is the temperature a constant 30 C....... a bit too high for curing. Trying to make ham and pancetta here ( in the fridge) but sausages is a challenge as we can not get the casing. Maybe my next trip to the uk or us i will try to look for them. Wonder if we can use fresh intestines?
Will run thru the posts first and catch up.........

A big welcome to swanie in Seattle and Swallow, somewhere in Manitoba. You know, it`s hard for land-lubbers like me to understand a province like Manitoba with 110,000 lakes in it, or a state with so much rain as Washington receives.
