I was just looking to learn more about emulsions and fat and water binders for sausages... but I am so impressed with the level of articles on the site, and the informational discussions on the board!

Yes making me homesick also! Add not to mention it has more Inland Lakes the a certain state that calls itself the land of lakes! And don't forget those Graet Lakes!

And for all you sausage munchers who think that you`ve got a large mall in your area... get this: In Minnesota, Bloomingtons Mall of America is so big, if you spent merely 10 minutes in each store, you'd be in the mall nearly four days. Sometimes the best solutions and information come from a source least expected. A few years back, an eighteen-wheeler carrying a huge fuel tank strapped to the cargo trailer, attempted to pass beneath a highway overpass on the freeway. The clearance was printed legibly and the driver knew the exact height of his load, but as the tractor entered the underpass, the trailer came to an abrupt halt. Within minutes, a matter of inches in the height of the trailer`s load had traffic backed up for miles. The load had become wedged tightly enough that it could not be removed even with other rigs helping to pull it back out. The Highway Patrol was stumped. State traffic engineers were baffled. Then a little boy, less than 6 years old, asked his father, "Dad, why don`t those cops just let the air out of the truck tires?"
That`s precisely what they did. In less than a quarter hour later, the traffic was moving again thanks to a little boy with imagination. Sometimes the ol` timers just don`t have all the solutions.
