Thank you very much for the warm welcome!
I was just looking to learn more about emulsions and fat and water binders for sausages... but I am so impressed with the level of articles on the site, and the informational discussions on the board!
Ill be looking forward to get into further details with sausage making

Hi Dan,

May I suggest Stan's new book. It's loaded with information about emulsions, fats, binders, etc. He really explains in detail, just how to make your own fat replacer from SP isolate and common vegetable oil. I'm sure you won't be disappointed. You can see the review and a link here: http://wedlinydomowe.pl/en/viewtopic.php?t=5216

Yep, enough river water to go around the earth at its equator! Yup jgfladten, I believe you folks are missing all the blessings of having tumbleweeds and cacti! Welcome aboard pal.

Welcome Aboard DrLicker in South Carolina and jwrobles in Eagan, Minnesota. Hey Dr., do you happen to be close to Sumter County - home to the world`s largest gingko farm? And for all you sausage munchers who think that you`ve got a large mall in your area... get this: In Minnesota, Bloomingtons Mall of America is so big, if you spent merely 10 minutes in each store, you'd be in the mall nearly four days. OOOOoooo I love these wide open spaces!
It`s nice to have you fellers join us on WD. Kick off yer` spurs, join us at the campfire, squat on yer` heels, and pour some brown gargle strong enough to float a Colt!

Welcome Aboard farmboy236 in Alexandria, Tennessee. I enjoyed reading your post about the reduction of fat in hogs over the past three decades. Sad but true. OK sausagemakers... name the longest running, live, radio program in the world. Hint... it`s just west of Farmboy`s little town of Alexandria. We`re glad to have you with us Farmboy236.

My mechanic told me, "I couldn't repair your brakes, so I just made your horn louder." It`s nice to have you with us CharcuterieGuy. Make yourself at home.

Sometimes the best solutions and information come from a source least expected. A few years back, an eighteen-wheeler carrying a huge fuel tank strapped to the cargo trailer, attempted to pass beneath a highway overpass on the freeway. The clearance was printed legibly and the driver knew the exact height of his load, but as the tractor entered the underpass, the trailer came to an abrupt halt. Within minutes, a matter of inches in the height of the trailer`s load had traffic backed up for miles. The load had become wedged tightly enough that it could not be removed even with other rigs helping to pull it back out. The Highway Patrol was stumped. State traffic engineers were baffled. Then a little boy, less than 6 years old, asked his father, "Dad, why don`t those cops just let the air out of the truck tires?"
That`s precisely what they did. In less than a quarter hour later, the traffic was moving again thanks to a little boy with imagination. Sometimes the ol` timers just don`t have all the solutions.
