Yesterday I got a package of breakfast sausage from the freezer and the day got complicated so we didn't eat brunch and I had a package of sausage thawed and begging to be used. It was about 12 ounces of loose mince and I mixed it with two cups of flour,a tablespoon of baking powder, a teaspoon of salt, a third cup of rendered fat and 6 ounces of shredded cheddar cheese and about 6 ounces of milk. It formed a dough and in teaspoon size bits I baked it for 25 minutes @ 375°F. It makes very pleasing savory snack bites.
Could use any sausage formula for this.

I had those at my first wedding. The results were horrid - the wedding that is. The sausage balls were spectacular.
