I just returned from a holiday in the UK where I was able to visit with a local butcher and champion sausage maker.

What fun!

I told him I was an amateur sausage maker looking for some tips and he spoke freely of processing tips, winning recipes, things to avoid, and was happy to show me every step of their process.

Brought clarity to my current understanding of sausage making, and fired me up for a round of grinding and stuffing this weekend!

Witt, you are a man after "me own" heart! Most people go on holiday and spend time fishing or lounging around the beach looking at pretty females.
You and I? Shucks, we go to a professional sausage maker and ask to see his wares. What the hell is the matter with us? :roll:

PS... Don't get me wrong... my second favorite holiday would be to chase Malgos (Margaret) around Poland for 2 weeks!

Malgos is a fellow member of this site and a moderator of the Polish speaking site. She is a knockout cook and sausagemaker, a very lovely cultured lady, and a gorgeous and shapely beautiful blonde... :razz: much too young for me - dang it!

This gets more interesting by the moment! I'll be doing the same old brined pork loins tomorrow night right after we get back from the indian casino. I get a $300 pair of Maui Jim sunglasses for just showing up, all due to my wife. Gals are the best CW, but ya gotta be real careful too, they play real rough at times. RAY
