Rules state that all boxes, tubs, containers (food) must be at least six inches off the ground being in a metal trough with paper under it makes no difference it still constitutes a health hazard if I was to do this in my operation I would be shut down plus fines.

Had I been there to watch the event, as incredible as it would have been to watch, I probably would not have eaten a Bratwurst roll.
Watch also how the person's glove touches the floor sometimes while he cuts the roll, then continous to come in contact with the roll.
Same thing when they lift the tray with the roll in, first some hands are at the bottom of the tray which was on the floor, then they touch the roll and they handle the Bratwurst afterwards.

Thanks for adding the screenshots Bubba. I guess you could chalk that up to the demon you know vs. the demon you don't know. Now I'm not gonna say that your local eatery would serve you food that hit the deck but if people knew the sanitation "standards" at many many restaurants of all caliber as well as major food manufacturers who made the processed food we're sold they'd likely grow all their own food.
