Well, Uncle Charles asked me if I could make a beef Italian sausage for him like he used to eat when he was in law school 42 YEARS AGO!

I have looked and searched and cannot find an Italian sausage recipe that calls for beef in lieu of pork!
What are the thoughts of me using this recipe and substituting beef for the pork? I will add fat as required to make the consistency.
